Coq au Vin de Cahors

Chicken cooked in a fine Cahors wine and vegetable sauce

This excellent chicken cooked with Cahors wine will remind you of all the flavours of the Quercy-Perigord. Put the Coq au Vin in a dish for oven use and heat for 15 minutes or so, and serve accompanied with roast potatoes or fresh pasta. The larger size is plenty for 2-3 persons while the small is perfect for 1.
